[About Hatsukokoro Hayabusa SG2 Series] The Hatsukokoro Hayabusa SG2 series uses SG2 powder stainless steel as the cutting core, clad with softer stainless steel. It features a clean satin finish and a thin, performance-focused blade geometry. With high hardness, excellent edge retention and strong corrosion resistance, SG2 is easy to maintain while offering precise cutting performance. The thin and lightweight construction makes the Hayabusa SG2 series well suited for both serious home cooks and professional chefs. [About Migaki Finish] Migaki (磨き) means “polished” or “shined” in Japanese. It refers to a smooth, clean blade finish that can range from a soft satin sheen to a more reflective polish. Unlike a full mirror polish, Migaki does not necessarily have a highly reflective surface, but instead emphasizes a refined and even appearance.

[About SG2 Steel (Super Gold 2)]
SG2 steel (Super Gold 2, SPG2) is a premium Japanese powder stainless steel developed by Takefu Special Steel. Produced through powder metallurgy, it has a very fine and uniform structure that allows high hardness while maintaining good toughness, wear resistance and excellent corrosion resistance. Takefu specifies a hardening capability of HRC 62 or higher.
Because of this balance, SG2 offers excellent edge retention, clean cutting performance and easier maintenance than traditional carbon steels. It is widely used in high-end Japanese kitchen knives where long-lasting sharpness and stainless convenience are both important.
Saya Care
1. Avoid long-term storage inside the saya
Even if there is no visible moisture on the blade, keeping the knife inside a sealed saya for a long period can trap humidity and may cause rust. For long-term storage, please take the knife out of the saya and store it separately.

However, scratches may still occur due to careless insertion or removal, so please keep this in mind when purchasing.
As this is considered a matter of normal use and handling, we may not be able to repair or compensate for scratches that occur during use.
