VG10 is a high-performance Japanese stainless steel widely used for kitchen knives. With relatively high carbon and ample chromium, plus elements like molybdenum, vanadium, and cobalt, it offers fine grain, strong edge retention, and good resistance to rust and staining. Proper heat treatment allows VG10 to take a keen edge, stay durable for daily prep, and remain reasonably easy to resharpen making it a popular “best balance” choice for both pros and enthusiasts.Saya Care
